Crock Pot Mongolian Beef

Here is a great recipe idea that is easy and quick! Ten to fifteen minutes of prep, everything in the crock pot, and a great meal 4-5 hours later.

Here is what you’ll need:

1 1/2 pounds of flank steak (cut into thin strips across the grain)

1/4 cup cornstarch

2 tablespoons olive oil

1 cup original yakitori sauce

3/4 cup water

3/4 cup brown sugar

1 cup carrots, julienned (about 3 medium-large carrots)

green onion, sliced for garnish

Here’s what you’ll do:

First I took the meat and yakitori sauce out of the fridge to come down to room temperature while I prepped everything else. In the crock pot, place the two tablespoons of olive oil, 1 cup of yakitori sauce, 3/4 cup of water, 3/4 cup of brown sugar and whisk until combined. Next wash and peel the carrots. To julienne them, I cut off the tips and ends, cut them into thirds, sliced lengthwise into thirds (or quarters) depending on how thick the carrot was, and then sliced them into nice little matchsticks. Three carrots gave me a cup. Take the flank steak and cut into thin strips across the grain of the meat. I found it easier to cut the flank steak in half lengthwise and then into strips. Place the flank steak into a ziplock bag and add the cornstarch, seal the bag, and shake until all the cornstarch is on the meat. There shouldn’t be any floating around the ziplock bag. Now you can add the meat and carrots to the mixture in the crock pot and give it a good stir to coat everything. As everyone has a different crock pot, and method they prefer, cooking time may vary a little bit. I placed it on high for two hours then set it to low for another three and everything was nice and tender. I know that 2-3 hours on high will work, as well as 4-6 hours on low. All that’s left is to steam some rice and slice some green onions for garnish, if you’d like. After smelling this cook all afternoon, I was so excited to have some I forgot to photo the end result with green onions! Will serve 4-6. Enjoy!

Hawaiian Style Meatloaf

First off, Happy New Year to everyone. Secondly, sorry for such a long period of no recipes. I was under the weather for almost three months. All better now.

Here is a easy and very tasty recipe to start the new year! Put all the meatloaf ingredients in a bowl, mix them together, and bake. It’s that simple.

Here is what you’ll need for the meatloaf:

1 pound very lean ground beef

1 pound ground pork

1 cup original yakitori sauce

1 cup onion, finely chopped

2 eggs

1 cup Panko bread crumbs

1/3 cup of milk

2 tablespoons mayonnaise

Here is what you’ll need for topping the meatloaf:

fresh pineapple slices, if available, otherwise canned will work

2-3 stalks green onion, chopped

more yakitori sauce

Here is what you’ll do:

Preheat oven to 350 degrees. Combine all the meatloaf ingredients in a large mixing bowl. Mix well by hand. Coat a 9 x 13 baking dish with cooking spray. Make a loaf shape in the cooking dish, leaving room along the sides lengthwise (see photo).

Bake in oven for 45 minutes. Remove from oven and place pineapple slices on top of meatloaf and drizzle yakitori sauce over meatloaf and pineapple to cover, as desired, then return to oven for 15 minutes. Remove, top with green onion, and serve with steamed rice and vegetable. As they say in Hawaii, “Ono-liscious” very tasty, enjoy!

Kalbi-style Flanken Beef Short Ribs

Here is a real easy, very tasty meal with little prep time. These ribs will come out similar to what you would get at a Korean restaurant if you ordered kalbi-style ribs.

Here’s what you’ll need:

2 pounds of flanken beef short ribs, ask your butcher to cut these for you, not too thick around 3/8″ (I was cooking for three, so adjust accordingly)

3/4 cup of spicy yakitori sauce

2 tablespoons of chili garlic sauce (optional, for more spice, I used it)

What you’ll do:

Measure out 3/4 cup of yakitori sauce and add the 2 tablespoons of chili garlic sauce and mix well. Pour a little into a ziplock bag then place a rib in the zip lock, add more sauce, then another rib and repeat until all are in the bag. Press out as much air as possible and gently massage in the marinade. Place in refrigerator overnight (24 hrs. or more) and rotate the next morning. Heat your grill on high until hot, spray with cooking spray or rub grates with oil, place ribs on hot grill and cook three and a half to four minutes per side depending on the doneness you prefer. Remove and serve with steamed rice and your choice of vegetable. Note: if you are serving four, I’d go with 3 pounds of ribs and use one cup of yakitori sauce along with the chili garlic sauce. (Use your judgement, enough to coat all the ribs well.) I even drizzled a little of the marinade on the ribs when I placed them on the grill.

Easy Appetizer Meatballs

These are great if you are having a party! Easy, simple, and quick.

What you’ll need:

1 pound of 85% ground hamburger

1/2 cup spicy or original yakitori sauce

1/4 cup bread crumbs

1/2 teaspoon freshly grated ginger

cooking oil

other optional items:

red pepper flakes to taste

2 tablespoons finely chopped green onion

What you’ll do:

Combine all ingredients (except cookng oil) in medium-size mixing bowl and hand mix to incorporate the ingredients well. If you’d like them spicier, add red pepper flakes and green onion. Take a pinch of the mixture and roll into approximately quarter sized balls. I made mine into half dollar sized balls which my family said was a little too large for party snacking. At the half dollar-size I made 20 meatballs, so at the smaller size you should have between 30-35. Lay them out on a cookie sheet with wax paper. Take a medium-size skillet and add enough cooking oil to cover the bottom of the pan and heat on medium to medium-high heat. Place about 10 meatballs in at a time and gently turn so that all sides get browned, about 5-6 minutes of cooking time, remove from heat to cool and repeat until all are cooked. Dab with a paper towel to remove excess oil. Enjoy!

Dutch Oven Short Ribs

Here is a tasty recipe that you spend about 5 minutes browning then place into the oven for 3 hours and you are ready to go!

What you need:

3-4 pounds of beef short ribs (have the butcher cut them into thirds)

2 cups beef stock

3/4 cup original yakitori sauce

orange slices (if desired)

2 tablespoons of olive oil

What you need to do:

Place short ribs into ziplock bag with 3/4 cup of yakitori sauce and let sit overnight. While oven is pre-heating to 300 degrees, take short ribs and brown (on all sides) in two tablespoons of olive oil in a large oven-safe pan (such as a Le Creuset), about 5 minutes should do it. Once browned, add 2 cups of beef stock and orange slices (if desired) for a citrus kick. I did this on half of the ribs, cover and place into the oven for 3 hours. At some point, you can start your rice and the your choice of vegetable so that they will be ready when the ribs come out of the oven. I left the orange slice on just for show, you should remove them prior to serving.

Won Tons, a Great Appetizer!

 

Here’s one I made with my daughter last night. We had lots of fun rolling, and folding, the won ton wrappers! What you will need: a half pound of ground pork and a half pound of ground beef; one package of won ton wrappers (I believe there are 50 wrappers per package); one quarter cup of yakitori sauce; some wax paper; enough oil to submerge the won tons  (about 3-4 inches); some type of slotted or mesh scoop (to remove the won tons as they cook; paper towels for draining.

The process:

Mix beef and pork together well. Add yakitori sauce and mix in well. Place down a large sheet of wax paper. Take a won ton wrapper (flour side down) and place about a tablespoon of the meat/sauce mixture, in a ball, in one corner and tightly (but gently) roll towards opposite corner stopping just short. You will have a triangle shape just above what you have just rolled. Take the two ends of the roll and fold backwards, behind themselves. Use a little of the meat mixture to adhere the two flaps to each other. See photos for finished shape.

Repeat until all the wrappers, or meat mixture is used up. Heat oil until very hot, place as many won tons as is safe into oil for 2-3 minutes (until golden brown) and remove. Repeat process until all have been cooked. Enjoy alone or with soy sauce or see our “Poor Man’s Sweet and Sour” recipe for a dipping sauce idea. Enjoy!

Marinated Flank Steak and Peppers

Here is another easy, and tasty, dinner idea.

What you’ll need:

1.5 pounds of flank steak

1 each, red, yellow, and green bell peppers

1 large onion

2 tablespoons olive oil

spicy and or original yakitori sauce

steamed rice optional

Marinate a flank steak (one and a half pounds) overnight in the original yakitori sauce. Heat your grill on medium-high heat, spray with non-stick spray or wipe grates with some olive oil. Place the marinated flank steak on the grill for 4-6 minutes per side. While that is grilling, slice in half one each, green, red, and yellow bell pepper, remove seeds, and quarter each half lengthwise and cut each strip into thirds or quarters. Take one onion and cut into half inch thick slices then quarter. Heat two tablespoons of olive oil in a large skillet over medium-high heat and place all vegetables in skillet to soften. Remove flank steak from grill and slice into strips, add to skillet then pour either spicy or original yakitori sauce over meat and veggies to coat. Remove from heat after 3-4 minutes and serve. Note: if your skillet isn’t large enough, divide ingredients into half for an easier time incorporating the sauce to caramelize. We even skipped making the rice! Enjoy!

Crock Pot Beef

Here’s one you can put in the crock pot and check on in 8-10 hours. All you need is two pounds of beef stew meat (or chuck roast, if you prefer it a little moister). Place the cubed stew meat into the crock pot, add a half cup original yakitori sauce, and one quarter cup white cooking wine, turn crock pot on at low setting, that’s it!

We served it with brown rice and sautéd vegetables. We used two bunches of broccolini; one bunch of green onions, cut into 3 inch slices; two carrots, sliced diagonally; one red bell pepper, sliced. In a large skillet, over medium-high heat, add one tablespoon of olive oil, all the vegetables, and stir occasionally for 5 minutes, then add one quarter cup of spicy yakitori sauce and stir for two to three minutes to caramelize.
